white chocolate popcorn with sprinkles

I spontaneously made this popcorn as an after dinner treat today, and immediately regretted it. Not because it wasn’t good (oh, it was), but because the last thing I needed after a weekend of behaving badly, food-wise, was popcorn coated in white chocolate and covered with sprinkles. My backside does not thank me, because it knows the workout that is coming tomorrow. But, I had half a bag of white chocolate chips on hand whose package told me they were set to expire tomorrow (do they really expire though?), so I figured why not.
This is such a simple treat to throw together if you need something spur of the moment (after dinner emergency?), yet is cute enough that you could also serve it to guests (I’m thinking a kid’s birthday party?). Whatever reason you make it, I think it’s best to ignore any nutritional info and instead just enjoy licking the white chocolate off your fingers.

White Chocolate Popcorn with Sprinkles
I found this recipe somewhere on the big ol’ internet, and now I can’t remember where it was! As soon as I remember where I saw this, I’ll add the source. It’s a simple enough recipe that I could easily remember it; my only change was to add a pinch of salt. Anyway, I remember reading that the white chocolate you buy for making candy melts better; I only had white chocolate chips and they worked okay, but the candy melts are surely superior. I made a half batch because I only had half a bag of white chocolate chips, but I’m giving the full recipe below. The sprinkles really have nothing to do with the taste, but rather visually break up the white-on-white of popcorn and white chocolate. Oh, and they’re cute.
This will make a lot of servings, about 12.
Ingredients
1/2 cup popcorn kernels
1 bag white chocolate chips
Pinch of kosher salt
Spinkles
Directions
Cook popcorn according to package directions. Transfer to large bowl.
Melt white chocolate in microwave in 30 second bursts, stirring between each, until melted and smooth.
Scoop chocolate onto popcorn and stir until evenly coated. Or, use your hands, but be careful – it’s hot! (I, uh, forgot about that part; ouch.) Sprinkle with a pinch of kosher salt, and mix again.
Top with sprinkles. Let cool a little, if you like, and eat immediately.

Yes, after initially tasting, we decided it needed a sprinkle of salt. Makes all the difference!

Looks delicious! Very similar to a red velvet popcorn I made last December…melted white chocolate + red velvet cake crumbles instead of sprinkles. Even better for your physique :)

Agh! It has been forever since I’ve had popcorn, I forgot how straightforward it is. And I love white chocolate…will definitely be making this soon.
I can relate – I always have popcorn in the pantry and I hardly ever make it, but when I do I remember how easy and fast it is and then I’m like, “Why don’t I make this more?!” Put the white chocolate on it though and you might create a total monster :) My daughter was asking for it again today, but thankfully I don’t have any more white chocolate…

Beware! If you really love white chocolate, this will be a problem because it’s just so easy and quick to throw together – and popcorn is the perfect vehicle for white chocolate, especially if you like a sweet/salty combo :)
